Long Weekend Feasting
We think an omelette is the most versatile meal there is! You can have it for breakfast, lunch or supper and you can fill it with almost anything - from cheese to caviar! It is a favourite for small kids and sophisticated adults. It goes with a glass of OJ and a flute of Champagne. It can be cheap or expensive, easy or intricate - and in most instances (except perhaps if you fill it with chocolate spread!), it is actually quite healthy too!
Chef Christiaan shares some lovely recipes that goes beyond cheese and ham and suggest his favourite Leopard's Leap wine combinations.

"On the Monday following Easter, people in Bessières, France make a giant omelette, using 15 000 fresh eggs. Legend has it that when Napoleon and his army were traveling through the south of France, they spent one night near Bessières. Napoleon ate an omelette prepared by a local cook, and he enjoyed it so much that he ordered the townspeople to gather all the eggs in the village and to prepare a gigantic omelette for his army the next day." Today still, on Easter Monday, the town celebrates this tradition by cooking a giant omelette made with 15 000 eggs! More than fifty volunteers bake, and then the whole community gather to share the meal.
