Mother's Day Recipe Inspiration - Coffee and Chocolate Mini Loaves

Coffee and Chocolate Mini Loaves
Ingredients
2 Cup Cake Flour
3/4 Cup White Sugar
1 Tbsp Baking Powder
1 Tsp Ground Cinnamon
1/2 Tsp Salt
1 Cup Milk
2 Tbsp Coffee Granules
1/2 Cup Olive Oil
1 Egg
1 Tsp Vanilla Essence
100g Milk Chocolate Chips
Instructions
1. Preheat oven to 190 C and prepare a muffin or mini loaf tray by spraying with non-stick spray.
2. In a large bowl, add the cake flour, sugar, baking powder, cinnamon, and salt. Mix together well.
3. In a separate bowl mix together the milk and coffee, until the coffee has dissolved. Add olive oil, egg, and vanilla essence. Whisk together.
4. Mix the wet ingredients into the dry ingredients and mix until smooth.
5. Add the chocolate chips to the batter and fold until chips have been distributed throughout the batter.
6. Add batter to muffin or mini loaf tray and bake for 15-17 minutes (muffin bake) or 26-28 minutes (mini loaves bake), or until a toothpick comes out clean.
