Natura Cheeky Peach Mocktail

Ingredients:

30ml    Peach and Thyme Cordial
15ml    Honey syrup
30ml    Fresh lemon juice
30ml    Natura White
Barker and Quin Ginger Ale

Glass: Old Fashioned

Garnish: Fresh thyme and peach wedges

Method:

Make the cordial: 

Make a sweet and fragrant peach and thyme cordial by simmering diced fresh peaches, fresh thyme sprigs, sugar, water, and a splash of lemon juice until thick and syrupy.

Ingredients:

3 large ripe peaches (pitted and diced or sliced)

1 cup white sugar

1 cup water

5 to 6 sprigs fresh thyme

1 tablespoon fresh lemon juice

Instructions:

Combine the diced peaches, sugar, water, thyme sprigs, and lemon juice in a medium saucepan over medium heat.

Simmer the mixture for 15 to 20 minutes, stirring often and gently pressing the peaches with a spoon to release their juices as the sugar completely dissolves.

Steep off the heat for 15 minutes to let the herbal thyme flavor get stronger.

Strain the liquid through a fine-mesh sieve into a clean glass jar or bottle, pressing down on the solids to extract all the flavorful syrup before discarding the pulp and thyme.

Cool completely, then seal and store the cordial in the refrigerator for up to two weeks.

Shake the mocktail:

Shake all ingredients except ginger ale, then strain into an ice-filled glass.

Top with ginger ale and garnish.
