Ingredients

90 ml Tequila

90 ml ruby grapefruit juice

60 ml Leopard’s Leap Sparkling Chardonnay Pinot Noir

30 ml honey simple syrup

Splash of cranberry juice

Method

Make the honey simple syrup: Combine equal parts (or 2:1 for richer flavor) honey and hot water, stirring until dissolved. This method allows it to mix properly, providing a complex, floral sweetness.

Fill shaker with ice cubes.

Add tequila, grapefruit juice and simple syrup.

Shake and strain into chilled glasses filled with ice cubes.

Top with cranberry juice and then sparkling wine.

Serve chilled.
