Quarantini Wine Cocktail Recipe
The title for this one is self-explanatory... The Quarantini is a refreshing wine cocktail for a balmy autumn day spent in lockdown. Other than offering you some delightful bubbly for a much-needed pick-me-up, it has some lime juice for Vitamin C, a dash of vodka for personality and if you can find an end-of-season passion fruit, it is just pretty and perfect. It does, however, also offer a solution to that little can of granadilla pulp in the pantry... We all know you're not gonna make that tart you've been saving it for.
Ingredients
4 fresh grenadillas approximately 60 ml juice (or open that little can....)
120 ml grenadilla vodka (this might have to be straight vodka with a spoon of pulp)
1 Tbsp lime juice (or a dash more to taste)
1 tsp vanilla sugar syrup
Well-chilled Leopard’s Leap Culinaria MCC, to top up
1 fresh grenadilla, sliced or halved to garnish
Method
Put two martini glasses in the freezer to chill. You can also use something with more volume. In fact, we'll probably recommend that.
Slice the grenadilla and scoop out the seeds into a small sieve set over your cocktail shaker. Press on the seeds with the back of a spoon to extract the juice. For a lazier option scoop the passion fruit fresh directly into the shaker.
Half fill your cocktail shaker with cubed ice. Add the vodka, lime juice, vanilla sugar syrup and shake hard for 30 seconds. (Also good for the triceps...)
Dip a straw into your drink and have a taste. Is it too sweet or too sour? Adjust by adding lime juice or sugar syrup as needed.
Double strain the drink into the chilled cocktail glasses and garnish with a thin slice of passion fruit.
Top up with Culinaria MCC.
