17 June - Perfect Pasta
While the jury is still out on whether it was the Chinese or Persians who first made pasta, Italy made it famous. Along with many other European culinary traditions, Pasta recipes came to South Africa during the late 1600’s. Although the only real heritage of this original pasta can be found in the way we make ‘snysels’, the importance of pasta was reaffirmed when Italians came to South Africa as prisoners of war after the Second World War and today it is very much part of our everyday eating.

Cheese and wine as a combination has been popular since the time of Napoléon who is said to have been partial to France’s famous Epoisses cheese with large quantities of Chambertine wine! Although winemakers and culinary experts are now telling us that cheese and wine might not be ideal partners, we have developed a few mouthwatering combinations in celebration of all that is fabulous and French for July’s French celebrations in the Franschhoek Valley.

Most of us had a mother, grandma or goggo teaching us the secrets behind our way of cooking and eating. In South Africa, traditional food is very diverse and home-cooking can be very different from one household to the next. For Women’s Month in August we celebrate the women who taught us to cook – whether it was with a secret blend of spices, over an open fire or with traditional culinary techniques!
