Blueberry and Spinach salad with feta and roasted almonds
Ingredients
For The Salad Dressing:
3 tablespoons extra virgin olive oil
1 tablespoon lemon juice freshly squeezed
1 teaspoon dijon mustard
1 clove of garlic crushed
½ teaspoon salt
¼ teaspoon ground black pepper
For The Blueberry Spinach Salad:
6 cups baby spinach and rocket leaves, washed and spin-dried
2 cups blueberries
½ cup crumbled feta cheese
½ cup almonds lightly roasted
Method
To make the blueberry salad dressing: Place all ingredients in a mason jar, put the lid and give it a good shake.
To Make the salad: Place baby spinach, rocket, blueberries, feta, and almonds i a large bowl. Drizzle it with the dressing. Give it a gentle toss.
Taste for seasoning and add in if necessary. Serve with a well-chilled glass of Leopard's Leap Chardonnay Pinot Noir.
