Weskus Smoked Snoek Gatsby

The Cape is known for the Gastby, a gigantic sandwich, usually a Baguette filled with different kinds of meat or sausage, slap chips, lettuce, tomato and sauce.

In celebration of heritage month, Dawid Botha bring us the ultimate heritage food combination with this iconic street food staple filled with smoked snoek, slap chips and apricot chutney. It doesn't really get more authentically SA than that!

INGREDIENTS

Apricot Chutney

• 100 g dried apricots, roughly chopped
• 50 ml boiling water
• 1 red onion, finely diced
• 1 cinnamon stick
• 3 star anise
• 5 ml ground turmeric
• 30 ml honey or 3 tablespoons of apricot jam.
• 30 g white sugar
• 150 ml apple cider vinegar

Gatsby

• 400 gsmoked snoek, on the bone
• 1 kg starchy potatoes, cut into 1.5 cm chips
• 2 liters sunflower oil, for deep-frying
• 2 tablespoons white vinegar, for the chips
• 1 large soft baguette
• 3 ripe tomatoes, sliced
• 6 iceberg lettuce leaves, finely shredded
• 1 teaspoons salt

STEPS
1. Add all the chutney ingredients to a pot and reduce until thick and glossy.
2. Vlek (fillet) your smoked snoek, ensuring there are no bones in your batch.
3. Starting building your Gatsby by adding lettuce, sliced tomato with salt and pepper.
4. Pack as much smoked snoek pieces on top of your tomatoes.
5. Spoon the apricot chutney over the snoek.
6. Pile the chips on top.
7. Add a spoon of mayonnaise either on the top or bottom of your roll
