Walnut, pear & blue cheese salad with Natura Red

Walnut, roast pear & blue cheese salad – with Natura Red

Salad ingredients:
3 Pears
1 Tbsp butter
3 Tsp brown sugar
100g Blue cheese of choice
200g Mixed salad leaves
½ Red onion, sliced
50g Raw walnuts

Dressing ingredients:
3 Tbsp Olive oil
3 Tbsp white wine vinegar
1 Tbsp mustard
1 Tbsp honey
1 Clove garlic, pressed
Salt and pepper to taste

Directions:
Cut the pears in half then use a small spoon to scoop out the core and seeds.

Place in an ovenproof dish, brush with melted butter and sprinkle with ½ teaspoon of sugar each.

Place in the oven at 180
° C for 15 minutes. Remove from the oven and fill each pear with some crumbled blue cheese. Place back in the oven for a further 10 minutes.

While the pears are in the oven, prepare the dressing by combining all ingredients in a small bottle and shake well to combine.

Once the pears are cooked, remove from oven and allow to cool. Assemble the salad by placing the salad leaves in a bowl, then layering with red onion, the rest of the blue cheese, the cooked pears and walnuts.

Dress before serving and enjoy with a glass of Leopard’s Leap Natura Red.
